Bonci Pizzarium
Build a trip to Rome
About
Gabriele Bonci's Pizzarium is often cited as the best 'pizza al taglio' (by the slice) in Italy. Using stone-ground flour and long fermentation, the crust is uniquely light yet crunchy. The toppings are the result of obsessive sourcing—think truffles, rare cheeses, and artisanal cured meats. The shop is tiny, so the 'dining room' is the sidewalk outside. Expert recommendation: the potato and mozzarella pizza sounds simple but is a masterclass in texture. Pro tip: it is located right next to the Cipro Metro station. Use the automated ticket machine for your turn and be prepared to wait; use the time to browse the incredible selection of craft beers available inside the shop.

Pizzarium Bonci
Founded by Gabriele Bonci, the 'Michelangelo of Pizza,' this tiny shop near the Vatican revolutionized 'pizza al taglio' (pizza by the slice). The secret lies in long-fermented dough made from heirloom grains and wildly creative toppings that change daily based on seasonal availability. The atmosphere is hectic, with people eating on the sidewalk. Expert recommendation: don't choose—ask the staff for small slices of 3 or 4 different varieties to experience the flavor range. Pro tip: take a numbered ticket upon arrival. It is located near the Cipro Metro station, making it the perfect gourmet pit stop before or after a visit to the Vatican Museums.
Vatican Museums & Sistine Chapel
The world's greatest collection of art accumulated over five centuries of papal patronage fills 54 galleries in the Vatican Palace, culminating in Michelangelo's Sistine Chapel ceiling painted between 1508-1512 while lying on scaffolding 20 meters above the floor—a physical and artistic feat that produced the most influential paintings in Western art history, including the iconic Creation of Adam. The Museum's Gallery of Maps with its stunning 16th-century cartographic frescoes, the Rafael Rooms with the School of Athens, the ancient Greek and Roman sculptures of the Laocoön group and the Apollo Belvedere, and the modern art collection added by recent popes create a day-long journey through the entirety of Western artistic tradition. Pre-booked tickets with early morning access significantly reduce the overwhelming crowds.
St. Peter's Basilica (Vatican)
As the spiritual center of the Catholic world, this Renaissance masterpiece features contributions from Bramante, Michelangelo, and Bernini. Standing on the site of St. Peter's burial, the basilica's interior is overwhelmingly vast, housing Michelangelo’s poignant 'Pietà' and Bernini’s bronze Baldacchino. The sensory experience is profound, from the smell of incense to the golden light filtering through the dome. Expert recommendation: climb the 551 steps to the Cupola (dome) for the most iconic bird's-eye view of St. Peter's Square. Pro tip: strict dress codes apply (no bare shoulders or knees); arrive before 7:30 AM to clear security before the lines extend several hours long.
La Pergola (Waldorf Astoria)
Rome's only three-Michelin-starred restaurant, led by Chef Heinz Beck, sits atop Monte Mario within the Rome Cavalieri hotel. It offers a transcendent culinary experience with a panoramic view of the entire city. The decor is opulent, featuring 17th-century tapestries and Sèvres porcelain. The sensory experience is one of refined elegance, from the 10-course tasting menu to the 29-page water menu. Expert recommendation: the 'Fagottelli La Pergola' (carbonara-filled pasta) is a world-renowned signature dish. Pro tip: reservations must be made 3-4 months in advance. The dress code is strict (jackets for gentlemen); arrive early to enjoy a cocktail on the terrace as the sun sets over the Vatican.
